Shrimp Fried Rice

I must say, I love GOOD take-out.  It's quick, convenient and the best part is that I don't have to cook whenever I order it.  For a busy mom juggling a career, a 2-month old, a tween and a husband, take-out is a true blessing. But I will admit, that there is something I like more than take-out. And that is freshly made food from my own kitchen.  Yes, I find myself tired a lot of evenings and don't feel like cooking, but being able to make food to your liking is wonderful. Okay, I will spare you and will refrain from typing a long story about one of my favorite quick meals to cook.  The family truly enjoys it and it is an easy recipe that my tween can help me with.  So here is the recipe for Shrimp Fried Rice. Shrimp Fried Rice

(Recipe adapted from Food.com's Chinese Fried Rice)

Servings: 4

Ingredients

  • 3/4 cup chopped onion

  • 2 1/2 tablespoons of cooking oil (I use canola)

  • 1 egg (lightly beaten)

  • 3 drops of light Soy Sauce

  • 3 drops of sesame oil

  • 1/2 to 1 lb. cooked shrimp (depends on your preference)

  • 1 cup frozen peas and carrots, thawed

  • 4 cups of cooked rice

  • 4 green onions chopped

  • 2 cups bean sprouts

  • 2 tablespoons light Soy Sauce

 

Directions

Heat 1 tbsp oil in wok; add chopped onions and stir-fry about 8 to 10 minute, until onions turn a nice light brown color; remove from wok.

Allow wok to cool down slightly.

Mix the lightly beaten egg with 3 drops of soy sauce and 3 drops of sesame oil and set aside.

Add 1/2 tbsp oil to wok, swirl to coat all surfaces and add egg mixture; swirl egg mixture until it sets against wok; when egg begins to puff, flip egg and cook briefly on the other side; remove egg from wok and chop into small pieces.

Heat 1 tbsp oil in wok and add shrimp along with carrots, peas and cooked onion; Stir-fry for 2 minutes.

Add rice, green onions, and bean sprouts to wok, tossing (or lightly stirring) to mix well; Stir-fry for 3 minutes.

Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in (stir lightly); Stir-fry for 1 minute and serve.
